Kabayaki is a traditional Japanese dish featuring grilled fish coated in a sweet and savory soy sauce-based glaze.
The character “kaba” in “kabayaki” refers to the spike of the reed plant. It is said that the name was given because the shape of a fish skewered on a skewer resembles that of a reed spike.
Kabayaki was devised during the Edo period.

While kabayaki is generally associated with eel dishes, it can also be used for other ingredients such as saury, squid, and chikuwa . This is because kabayaki was originally a high-class dish made with eel, which was too expensive for common people.

It’s delicious even if it’s not eel!
