In Japan, when we talk about fried chicken, we usually mean Karaage, Tatsuta-age, or KFC.

Tatsuta-age is a popular Japanese dish that is often served with rice and vegetables. Chicken and mackerel are popular choices for tatsuta-age, which is traditionally marinated in soy sauce, mirin, and ginger to remove any unpleasant odors, then coated in cornstarch and deep-fried.

The name is said to come from the appearance of the fried dish, with the soy sauce coloring the surface and the cornstarch forming white spots reminiscent of autumn leaves flowing down the Tatsuta River.
