Goya, also known as bitter melon or bitter gourd, is a vine-growing plant native to India and widely cultivated in Asia, Africa, and the Caribbean. Goya is a popular ingredient in Japan, particularly in Okinawa, where it is the southernmost prefecture in Japan.
Goya is a good source of vitamins A, C, and K, as well as fiber, potassium, and magnesium.

Most famous Goya dish in Japan

“Goya champuru” is a dish born from Okinawa’s subtropical climate and unique food culture. This is a stir-fry dish made with bitter melon, tofu, eggs, and pork belly. The combination of bitter melon’s bitterness and tofu’s mild flavor pairs perfectly with rice.
It’s also rich in nutrients like vitamin C and beta-carotene, making it effective in preventing summer fatigue.

Champuru means “to mix” or “to combine” in Okinawan dialect!
