Kinpira is said to have originated in the Edo period (1603-1868) and is named after Sakata Kinpira, a legendary bandit who was known for his strength and swordsmanship. According to the legend, Kinpira’s wife taught him this dish to help him stay strong on his travels. Japan is the only country that has been eating burdock for many years.
